Curly pie with jam

STEP 1

How to make curly jam pie? Prepare the necessary ingredients for this. I use category C1 eggs. You can use margarine instead of butter. But keep in mind that it is the use of butter that makes the structure of the shortcrust pastry more loose and crumbly. Sift the flour through a sieve to saturate it with oxygen.
STEP 2

Cut the butter into pieces and place in the microwave for 10-20 seconds. The bulk of the butter will become soft. A little butter will begin to melt.
STEP 3

Add sugar to the butter in a bowl and rub them together. To prepare the dough, just use a whisk. Everything is mixed well by hand.
STEP 4

Next, stir the eggs into the butter mixture.
STEP 5

Add soda and a pinch of vanillin. Gradually add flour and knead the shortbread dough. Do not add all the flour at once. Focus not on the amount of flour, but on the consistency of the dough. You may need a little less or more. At this stage it is convenient to use a wooden spatula. When the dough becomes denser, you can knead it with your hands.
STEP 6

There is no need to knead the shortbread dough for a long time, otherwise it will become clogged with flour and become hard. As soon as the dough begins to come together into a ball and stops sticking to your hands, do not add any more flour. Divide the finished dough into two unequal parts. Place the smaller part in the freezer for 1-1.5 hours until it becomes hard.
STEP 7

Line the bottom of a springform baking pan (26-28 cm) with parchment. Spread most of the dough over the entire surface and form small sides.
STEP 8

Spread thick jam throughout the dough. I have blackcurrant jam. Excess sides can be tucked onto the top of the jam.
STEP 9

Remove the frozen dough from the freezer and grate it over the entire surface of the pie. The grated dough looks like curls. Place the pie in the oven, preheated to 190 degrees for 30-40 minutes. Be guided by your oven.
STEP 10

The finished pie will be a delicious golden color. Remove it from the mold and cool. Enjoy your tea!
