You may need a little less or more. At this stage it is convenient to use a wooden spatula. When the dough becomes denser, you can knead it with your hands.

    There is no need to knead the shortbread dough for a long time, otherwise it will become clogged with flour and become hard. As soon as the dough begins to come together into a ball and stops sticking to your hands, do not add any more flour. Divide the finished dough into two unequal parts. Place the smaller part in the freezer for 1-1.5 hours until it becomes hard.

    Line the bottom of a springform baking pan (26-28 cm) with parchment. Spread most of the dough over the entire surface and form small sides.

    Spread thick jam throughout the dough. I have blackcurrant jam. Excess sides can be tucked onto the top of the jam.

    Remove the frozen dough from the freezer and grate it over the entire surface of the pie. The grated dough looks like curls. Place the pie in the oven, preheated to 190 degrees for 30-40 minutes. Be guided by your oven.

Today I baked a delicious curly pie with jam for tea. For the pie I took two types of preparations: cherry jam and berries from Yoshta jam. The dough turned out soft and pleasant to work with. I divided it, as recommended, into two unequal parts. I put the smaller one in the freezer and the larger one in the refrigerator. Grating the frozen dough was very convenient. Bake the pie until lightly browned. It turned out very tasty. The recipe is great!
