STEP 1
How to make curd gingerbread cookies? Prepare all the necessary ingredients.
STEP 2
Let's prepare the gingerbread dough. Take a bowl, put cottage cheese in it. Take cottage cheese of any fat content. Add sour cream, choose a quality product without milk fat substitute. Add the egg yolk; first wash the egg in warm water and soda, as there may be harmful bacteria on their surface. Add lemon zest, baking powder, sugar, vanilla sugar and spices. If you use vanillin instead of vanilla sugar, add it at the tip of a knife.
STEP 3
Beat everything until smooth with a mixer. If your cottage cheese is grainy, first rub it through a sieve or punch it with an immersion blender.
STEP 4
Sift the flour through a sieve, this will saturate it with oxygen and make the dough more airy. Add the flour into the curd mass in several additions and knead into a homogeneous, soft, non-sticky dough. The properties of flour may differ from one manufacturer to another, so you may need less or more flour, depending on the required consistency of the dough.
STEP 5
Cover the dough with a towel and leave at room temperature for 30-40 minutes to “rest.”
STEP 6
When the dough has rested, divide it into 12-14 pieces of equal size.
STEP 7
Roll each piece of dough into semi-circular balls.
STEP 8
Place the gingerbread pieces on a parchment-lined baking sheet. Bake the gingerbread cookies in an oven preheated to 180°C for about 20-25 minutes. The times are approximate, use your oven as a guide.
STEP 9
How to make glaze? Prepare the necessary ingredients.
STEP 10
Place the egg whites in a deep bowl, beat with a mixer until stiff, gradually adding powdered sugar. Egg whites must be chilled. Beat for 7-10 minutes. You should get a thick mass that holds its shape well.
STEP 11
If desired, you can add 1 tablespoon of lemon juice to the glaze.
STEP 12
Remove the finished gingerbread cookies from the oven, cool completely and cover with glaze. You can dip the gingerbread cookies in the glaze or spread it on them and spread it with a teaspoon. Place them on a flat plate or dish and leave them at room temperature.
STEP 13
Wait for the glaze to dry completely. Brew tea or coffee and serve the finished gingerbread cookies. Enjoy your tea!
