STEP 1
How to make cottage cheese cake with cookies? First, prepare all the ingredients needed for the cream.
STEP 2
Pour sugar into a deep bowl (so as not to stain the surrounding surface in the future), add soft butter. To do this, remove the butter from the refrigerator in advance, at least 30 minutes before starting cooking. Cream the butter and sugar thoroughly using a silicone spatula. Take natural butter without using vegetable fats.
STEP 3
Add cottage cheese, sour cream and vanilla sugar to the butter. If your cottage cheese is in lumps, then first punch it with a blender or rub it through a sieve. Choose natural sour cream without the use of vegetable fats. It can be of any fat content. Instead of vanilla sugar, you can use vanillin on the tip of a knife. A larger amount may add bitterness to the finished dessert.
STEP 4
Beat everything with a mixer until smooth. The cream is ready. Leave it aside for now, we will return to it a little later.
STEP 5
Prepare the necessary ingredients for the base of the cake.
STEP 6
Pour the milk into a deep bowl, add powdered sugar and stir. The powder should completely dissolve.
STEP 7
Take a mold for the future dessert, cover it with cling film or line it with baking paper. I have a mold measuring 15 by 25. Take the cookies, quickly (so that they do not have time to get wet), dip each one in milk and place in the prepared mold.
STEP 8
Place the cookies in one layer, close to each other.
STEP 9
Apply a thin layer of curd cream on top. Repeat layers until you run out of ingredients.
STEP 10
The top layer should be curd cream. Cool the cake in the refrigerator for an hour.
STEP 11
Prepare chocolate for glaze.
STEP 12
Break the chocolate into pieces and melt in a water bath. If desired, you can add a little condensed milk and stir. The glaze should be well melted and flow freely. If the mass turns out to be thick, then add a little milk to it, achieving the desired consistency.
STEP 13
Pour the frosting over the top of the cake and smooth it out using a silicone spatula. Place the cake in the refrigerator overnight. When serving, cut it into portions. You can decorate the cake with pieces of chocolate, fresh berries or a mint leaf.
