  1. STEP 1

    STEP 1

How to make cookies from buckwheat and rye flour? Prepare your food. You can take ready-made buckwheat flour or make it yourself. To do this, you will need a regular coffee grinder. Read about the properties of wheat and rye flour in the articles below the steps.

  2. STEP 2

    STEP 2

Sift the dry ingredients into a separate container - buckwheat and rye flour, cinnamon, baking powder, starch, and then mix them. You will learn all the subtleties of using baking powder in baking by reading the article at the end of the recipe.

  3. STEP 3

    STEP 3

Beat the eggs into another bowl. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Beat eggs with sugar until fluffy and light.

  4. STEP 4

    STEP 4

Add honey, stir. If the honey is thick, heat it slightly in a water bath.

  5. STEP 5

    STEP 5

Add olive oil and lemon juice and stir. Instead of olive oil, you can use any vegetable oil.

  6. STEP 6

    STEP 6

Pour the mixture of dry ingredients into the liquid mixture.

  7. STEP 7

    STEP 7

Knead into a homogeneous, shortbread-like dough. Since flour from different manufacturers has different properties, you may need less or more of it. Focus on the consistency of the dough.

  8. STEP 8

    STEP 8

Roll it out into a layer 0.6-0.8 cm thick. Cut out the cookies using a round notch or glass. You can use any molds, but it’s better not to use too small ones. Do the same with the scraps - roll out and cut.

  9. STEP 9

    STEP 9

Place the cookie dough on a baking sheet lined with oiled parchment.

  10. STEP 10

    STEP 10

Bake cookies in an oven preheated to 180 degrees for about 20 minutes. The times are approximate and will depend on the operating characteristics of your oven. Read about ovens in the article below the steps. It is necessary to closely monitor the baking process so that the cookies do not dry out. As soon as the edges begin to brown, remove it immediately.

  11. STEP 11

    STEP 11

Cool the finished cookies and serve. Bon appetit!

This was my first time baking cookies from buckwheat and rye flour. Yes, I haven’t even baked separately from each type of flour presented in the recipe before, so it was interesting to try. Buckwheat flour, by the way, was made from buckwheat using a coffee grinder. To achieve the desired consistency of the dough, I used a little more rye flour so that it would stick less to my hands. By the way, the aroma of the dough itself was very pleasant. It was easy to roll out; I cut out the cookies using a glass. While baking, the aroma in the kitchen was simply amazing! After 20 minutes I took them out of the oven. By the way, I didn’t oil the parchment, it’s good, nothing sticks to it, so the cookies came off easily. It rose a little, became a little airy, and it turned out to be very tasty! The honey is not noticeable, but the cinnamon is noticeable. With tea or milk it turned out just right!
