    How to cook compote from sea buckthorn and apples for the winter? Prepare the necessary ingredients for this. Take apples that are firm but ripe. Preferably sweeter, as sea buckthorn adds acidity to the compote. Separate the sea buckthorn berries from the branches and sort them from leaves and other debris.

    Rinse the sorted berries well several times in cold water, and then drain in a colander. Wash the apples to remove dirt. Cut each apple into 4 parts and remove the core. If there are damages on the apples, they need to be trimmed.

    You can use jars of any size for compote; the cooking technology will not change. You can also fill jars in different ways. You can fill it completely - then the compote will be more concentrated, but there will be less of it in the jar. I fill the jars to about 1/3 of the total volume. Cut the apples into slices and place them in clean jars. Add sea buckthorn berries.

    Bring the water to a boil and fill the jars with hot water to the very top. Cover with lids and leave to stand for 20 minutes. During this time, the apples and sea buckthorn will warm up well, all the air will come out of them - this will be visible from the rising bubbles.

    Then pour all the water from the jars into a saucepan and add sugar. You can slightly change the amount of sugar in one direction or another to suit your taste. Place the pan on the fire and bring to a boil. Stir until the sugar is completely dissolved. Leave the syrup to simmer for 1-2 minutes.

    Then fill the jars again with boiling syrup to the very top and close tightly with the prepared lids. Wrap the jars in a blanket and leave to cool slowly. In this form, they will continue to warm up for a long time. Store the cooled jars in a cool place for storage.
