They must be fresh, ripe, but not very soft in order to keep their shape in the compote. There should be no damage or spoilage on cherries and apricots.

    Compote can be made in three liter jars or one 3 liter jar. Rinse the selected jars thoroughly with detergent or baking soda, and then rinse several times in running water. Sterilize jars in any way convenient for you. This can be done in the oven, in the microwave or over hot steam.

    Sort out the cherry berries from the branches and leaves. Rinse the apricots and cherries well and place in a colander to drain excess water. Cut each apricot in half and remove the pits.

I missed the fruit season this year and didn’t make compotes. So I froze more fruit to cook in the winter. Today, to vitaminize the body, I made a compote of apricots and cherries for the winter. Some of it was poured into jars, and some of it was left to drink immediately. A large amount of sugar is needed to preserve the product. For me, this compote is more of a concentrate that can be diluted to the desired sweetness. The drink turned out to be a delicate pink color. The taste is very pleasant, slightly sour. But the aroma of apricot when cooked is simply stunning! Next summer I will definitely close more jars with this amazing fragrant smell and bright fruits.
