Coconut muffins with cherries

STEP 1
Products for making muffins.
STEP 2
turn on the oven at 200 degrees so that it warms up well. Place the butter (or margarine, but butter is better) over low heat to melt.
STEP 3
In a large bowl, mix the dry ingredients: sifted flour with baking powder, sugar, coconut flakes.
STEP 4
In another bowl, mix eggs with milk.
STEP 5
Pour the melted butter here and mix thoroughly.
STEP 6
Pour the liquid mixture into the bowl with the dry mixture and stir until smooth. This is easy to do with a whisk or just a fork. The dough is not very thick.
STEP 7
Fill the silicone molds with dough to 2/3 of the volume. Place a cherry in each mold and lightly cover with batter. You don’t have to cover it, because... When baking, the cherry will still fall down. Put it in the oven.
STEP 8
Bake for 20 minutes, then check. If the top is not yet browned, move the baking sheet with the molds to the upper position of the oven and bake for another 5-10 minutes. Be guided by your oven.
STEP 9
Let the muffins cool slightly. Carefully remove from the molds. They are very gentle. Sprinkle powdered sugar on top through a fine strainer.
