    Cut each potato into 2-3 parts and place in the pan in which you will cook. Fill the potatoes with water until they are completely submerged. Place the pan with potatoes on the fire. Bring to a boil and add a little salt. Cook the potatoes in boiling water over medium heat until tender. This will take about 20 minutes, depending on the type of potato. Then drain the hot water from the potatoes.

    Add butter to hot potatoes and mash with a potato masher. The butter will immediately begin to melt. Then add eggs and flour. You may need to add a little more flour. Still remember to use the masher to mix all the ingredients well together. Wash the eggs with soda first, as they may contain harmful bacteria. Cool the finished potato mixture a little so that it is not too hot to mold the cutlets with your hands. You will get a thick, sticky mass.

    Place breadcrumbs in a separate bowl. Take a little potato mixture with a wet spoon, spread it in breadcrumbs and roll on all sides. Use your hands to form small patties.

You can make delicious cutlets from leftover mashed potatoes. I didn’t add any filling, these are classic cutlets. I didn't have breadcrumbs, so I used regular flour. The cutlets stick together well and don’t fall apart. When finished, they also keep their shape perfectly. The cutlets had a crispy, golden brown crust. There is soft puree inside the cutlets. We ate them with fresh vegetables. A tasty and simple potato dish that is quick to prepare. A good quick recipe.
