  1. STEP 1

    STEP 1

How to make classic dumplings with cottage cheese? Prepare your food. First for the test. It may take more or less flour than what is written in the recipe. You will look at the test. The water needs to be heated. Sift the flour first.

  2. STEP 2

    STEP 2

Take a bowl and pour warm water into it. The water should be noticeably warm, so the dough will knead faster. Break the egg, add salt. Using a fork, whisk the water and egg until smooth.

  3. STEP 3

    STEP 3

Start adding flour one glass at a time, stirring the dough after each portion. First stir with a fork, then, when the dough begins to thicken, with your hand.

  4. STEP 4

    STEP 4

Add the third glass in small portions. The dough should come together into a ball, but still remain soft. It is important at this stage not to shift the flour so as not to clog it. Otherwise, you may end up with tough and unpalatable dough. Knead the dough for a long time, it should absorb all the flour and stop sticking to your hands.

  5. STEP 5

    STEP 5

At the very end, place the dough on the board. It will become absolutely smooth and non-sticky. Gather the dough into a ball and cover it with a towel. Leave the dough on the counter for 30 minutes. During this time, gluten will develop well in it - the dough will become very elastic and pliable.

  6. STEP 6

    STEP 6

While the dough is resting, prepare the filling. Get groceries for her. Choose tasty cottage cheese, this is the main criterion. Adjust the amount of sugar and salt to your taste. We love sweet curd dumplings. And there are people who cook dumplings with salted cottage cheese. I didn’t add an egg to the cottage cheese because it’s soft on its own. If your cottage cheese is a bit dry, add a yolk to it to “bind” the filling.

  7. STEP 7

    STEP 7

Place cottage cheese in a bowl. Add sugar and salt. At this stage, feel free to taste the filling, adjusting it to taste.

  8. STEP 8

    STEP 8

Mix the cottage cheese well until smooth. And decide whether to add an egg to it.

  9. STEP 9

    STEP 9

Divide the rested dough into three parts. Leave two under the towel. Stretch the third part into a long sausage. Cut it into pieces. This is one of the ways to make dumplings. You can also roll out the dough into a circle, cut it into circles and mold them. With my method, all the dough will go away, without any leftovers.

  10. STEP 10

    STEP 10

Roll each piece into a circle. Lightly dust the board with flour; the dough will become a little sticky.

  11. STEP 11

    STEP 11

Place a spoonful of filling on the circle. Seal the edges to form a dumpling. You can leave it like this, or you can twist the edge in a curly manner - it will be both beautiful and more reliable. Make all the dumplings in the same way. Place the finished dumplings on a board dusted with flour.

  12. STEP 12

    STEP 12

How to cook dumplings? Boil water in a saucepan. There should be a lot of water so that they don’t feel crowded during cooking. Salt the water. Throw in the dumplings. Stir gently to prevent them from sticking to the bottom. The dumplings will soon float to the surface. Boil them for just a couple of minutes. Remove the dumplings with a slotted spoon to a plate and serve immediately. Dumplings are served with butter, sour cream and jam to taste.

Classic dumplings with cottage cheese are a favorite breakfast for the whole family! Take it with sour cream, how delicious it is. And even children gobble it up on both cheeks, although you can’t force them to eat the cottage cheese itself. Healthy, nutritious, and most importantly – delicious! Your recipe turned out excellent, the balance of flour and liquid was perfect. The dough didn’t turn out too tight, it was easy to work with and the dumplings didn’t get overcooked. Sometimes it was sticky, of course, but I kneaded patiently and tried not to add excess flour. I added a little more sugar to the filling (5 tsp) because my family likes it sweeter. In the photo - a batch of dumplings ready for cooking, there was no opportunity to take a photo of the finished ones, they are eaten in an instant)

The idea to make dumplings was born spontaneously. My daughter is on sick leave and she’s bored. This morning I woke up and asked us to make dumplings with cottage cheese together. It’s good that you can always find a suitable recipe on the site) The dough was kneaded perfectly and rolled out thin. Making dumplings is a pleasure, the main thing is to immediately put the water to boil, because we made the dumplings quickly) The result was very tasty sweet curd dumplings, with sour cream they were absolutely delicious, we also put black currants on plates. And we had a wonderful breakfast and creativity together with the child in the kitchen.

During the New Year holidays, I want to relax and recharge with positivity. And the best way, it seems to me, is to cook a tasty and healthy dish with the whole family - dumplings. After all, nothing brings relatives together like cooking together. As a filling, I used cottage cheese, as in the recipe. But cottage cheese with sugar alone will be too dry, so I added 1 egg to the same mass of cottage cheese. This way the filling turns out juicier, and it is more convenient to put it inside the dumpling. I also changed the dough a little: I used half regular flour and half durum wheat. This flour is more like semolina and is recommended specifically for dumplings and dumplings. The dough with such flour turns out to be elastic and soft, but it quickly becomes dry and crusty, so you need to work with it quickly (call family members for help). When you first make the dough, wrap it in cling film for half an hour. Ready-made dumplings are incredibly tasty and appetizing) I recommend them to everyone!
