And then knead the dough with your hands. Since flour from all manufacturers has different properties, you may need less or more of it.

The biscuits should become firm, but not have time to brown too much.

Moreover, I didn’t add all the flour into the dough; I didn’t want to knead the dough too thick. Therefore, I ended up with not quite hard biscuits, but softer cookies. I did everything according to the recipe, but without sugar and flour it took a little more (I dusted the dough so it wouldn’t stick to my hands). I rolled it out thinly. I got delicious thin crispy biscuits, similar to store-bought ones. I'm happy with the result, the recipe is good! Next time I will bake biscuits using the same recipe.
