STEP 1

How to quickly and easily prepare rich pies from airy yeast dough on kefir with cherry filling, which, without any doubt, will appeal to many and will pleasantly surprise you with their wonderful taste? First of all, prepare the necessary products at room temperature for preparing homemade butter cakes with cherry filling.
STEP 2

To prepare the butter dough, take a large bowl and pour two hundred and fifty milliliters of warm homemade kefir into it, then break one chicken egg into the bowl, add the white from the second chicken egg and mix until smooth.
STEP 3

Take a deep bowl and place in it five hundred grams of premium wheat flour, previously sifted through a fine sieve, then pour into the bowl one third of a teaspoon of salt, fifty grams of sugar, one teaspoon of baking powder, one teaspoon of vanilla sugar, two teaspoons of dry instant yeast and mix all ingredients.
STEP 4

Place all the dry ingredients in a bowl with the kefir mixture in two additions, then mix all the ingredients together and knead the butter dough.
STEP 5

Continue kneading the dough well in the bowl with your hands for five minutes, then add forty grams of softened butter to the bowl and continue kneading the dough until smooth for another five minutes.
STEP 6

Knead the dough of homogeneous consistency in a bowl, grease it with one tablespoon of vegetable oil, then cover the bowl with the dough with a kitchen towel and put it in a warm place for one hour to proof.
STEP 7

To prepare the filling, take a frying pan and place it on the stove, then put about five hundred grams of freshly frozen cherries in it, pour in one hundred grams of sugar, add twenty grams of butter, then mix all the ingredients in the frying pan and melt the sugar for two minutes over medium heat on the stove.
STEP 8

Take a small bowl and put twenty-five grams of starch into it, then pour three tablespoons of cherry juice into it and mix, then pour the resulting starch mass into a bowl with one hundred and fifty milliliters of cherry juice and mix together until smooth.
STEP 9

Pour the prepared starch mixture from the bowl into the frying pan and mix all the ingredients together until you get a fairly thick pie filling over medium heat on the stove, then turn off the stove and cool the prepared filling.
STEP 10

As time passes, grease your hands with the working surface of the table with one tablespoon of vegetable oil and place the dough on the table, then take the required amount of dough one by one and roll it into koloboks, of which there are fifteen, then place them on the table and cover with a kitchen towel.
STEP 11

Alternately knead the dough balls into flat cakes of the required size and place the required amount of previously prepared cherry filling on them.
STEP 12

Well mold the ends of the filled cakes and form pies of the required size, which are then placed at a distance from each other on a baking sheet pre-lined with parchment, then cover the top with a kitchen towel and leave to rise.
STEP 13

Sprinkle a small amount of wheat flour on the table and knead a piece of the remaining dough on it to prepare decorations for the pies, then roll out the dough to a flat cake about five millimeters thick, then take a suitable mold and cut out small blanks for further decorating the pies in the form of cherries.
STEP 14

Place a couple of cherry-shaped pieces on the spaced pies, then roll out the remaining dough to a thin cake about two millimeters thick and cut thin strips with which you continue to decorate the pies in the shape of cherry stems.
STEP 15

Place the baking sheet in an oven preheated to one hundred and seventy-five degrees and bake the pies for fifteen to twenty minutes, five minutes before they are ready, brush the pies with egg yolk beaten with two tablespoons of warm milk, then remove the baking sheet with the prepared pies from the oven.
STEP 16
