I was interested in a recipe for buns with dried apricots made from yeast dough. Eggs used category C1. Replaced fresh yeast with 1 tsp. dry. I used about 2 kg 100 grams of flour: 2 kg premium and 100 grams whole grain. The dough turned out tender and soft. The dough took about 3 hours to rise (my house is quite cool; in warm weather, I think the time will be shorter). I kneaded the dough once. It turned out to be a lot of dough, a lot! I had 200 grams of dried apricots. Instead of apricot jam I added raspberry jam. I had enough filling for 8 buns (I shaped them into roses). I used the rest of the dough to make a large blueberry pie. I baked the buns for 30 minutes at 180 degrees: 10 minutes on the middle level of the oven and 20 minutes on the highest one. The buns turned out tender, tasty, soft, fluffy. I never thought that dried apricot filling would be so tasty: moderately sweet with a slight sourness. Thank you very much for the awesome recipe!
