Broccoli and chicken soup
Step-by-step preparation
STEP 1
How to cook broccoli and chicken soup? Prepare all the necessary ingredients. You can use any part of the chicken: thighs, fillets, drumsticks, wings. The main thing is that the bird has enough meat and bones for a rich broth. If the meat was frozen, then defrost it first by transferring it from the freezer to the bottom shelf of the refrigerator. Wash and peel the potatoes, carrots, onions and garlic cloves.
STEP 2
Rinse the chicken thoroughly and dry it. You can immediately cut it into portions or do this after the chicken is cooked, before adding the vegetables.
STEP 3
Place the chicken, a whole onion, and a clove of garlic into the pan. Pour in 2 liters of water. Place the pan over high heat. Bring the water to a boil, skim off the foam with a slotted spoon. Then reduce the heat to medium and cook the chicken for 40 minutes until cooked, periodically removing the foam.
STEP 4
You can use either fresh or frozen broccoli. If you have fresh cabbage, separate the florets from the stalk and rinse them thoroughly in cold water. If you use frozen broccoli florets, do not defrost them first.
STEP 5
Grate the carrots on a coarse grater or cut into strips.
STEP 6
Cut the potatoes into medium cubes.
STEP 7
Add potato cubes, grated carrots and broccoli florets to the pan with the broth.
STEP 8
Bring the broth to a boil again and cook everything together for about 20 minutes over medium heat until the vegetables are cooked. Test it on potatoes - the pieces will break easily when pressed with a spoon. At the end, add salt and pepper to the soup. Remove the onion and garlic clove and discard.
STEP 9
Cover the pan with a lid and let the soup simmer for about 15 minutes.
STEP 10
Then pour the chicken and broccoli soup into bowls and serve. Bon appetit!
