STEP 1
How to cook a tongue? Prepare your food. If necessary, defrost the tongue first. Trim off any excess fat. Then rinse it thoroughly under running cold water.
STEP 2
Place the tongue in a saucepan and fill it with cold water. Place the pan on the fire. Bring the water to a vigorous boil. Then carefully drain the water from the pan. Water will absorb everything harmful and unnecessary that is in the tongue, and it is better not to use it.
STEP 3
Fill your tongue with new, but already boiling water. I boiled water in a kettle. You can take out your tongue for now and boil water right in the same pan. It is important that the water is hot, then the tongue will remain soft and tender.
STEP 4
Bring the water to a boil again and add the peeled whole onion into the broth. You can also add whole carrots and celery root.
STEP 5
Cook the tongue at a low simmer over low heat for 2 to 4 hours. Cooking time depends on the size of the tongue and the age of the animal. I cooked my 800-gram one for 3 hours. Check your tongue periodically for readiness.
STEP 6
Half an hour before the end of cooking, salt the tongue and add ground pepper and bay leaf to the pan. It is important to add salt at the end of cooking, otherwise the tongue may remain tough. You can do this 2-2.5 hours after the start of cooking.
STEP 7
When the cooking time is over, place your tongue in cold water. I put it in a basin that is in the sink. And I keep my tongue under running water for a while so as not to get burned in the future.
STEP 8
Let your tongue soak in cold water for 2-3 minutes. After this procedure, the skin from the tongue will be cleaned without much difficulty. When you clean the skin from the tongue, wipe it with napkins and put it under the lid in the refrigerator to cool.
STEP 9
It is when the boiled tongue is cooled that it is easier and easier to cut into thin slices. Bon appetit!
