Since bird cherry berries have a sweet, slightly tart taste, absolutely devoid of acid, it is customary to add other sour berries to the compote: black or red currants, cherries, etc. In this case, the acid of fresh lemon is used.

    Sort the bird cherry well, remove the stalks if you find them. Rinse the berries under the tap using a sieve or colander.

    I show you the easiest way to prepare bird cherry compote in a small amount. This way you can cook berries within one to one and a half kilograms, it all depends on the size of the sieve or colander you have. Place the berries in a sieve, and lower the sieve into a deep bowl of suitable size so that the berries with the sieve can sink into it when immersed in water. Pour boiling water over the berries in a sieve bowl for 2-3 minutes.

    Lift the sieve and shake the berries, thus allowing the water to drain. Sterilize jars or bottles in a way convenient for you.     Pour water into the pan, add sugar, put on fire and cook the syrup. Boil the syrup until the sugar is completely dissolved. It took me about 5 minutes.

    Pour boiling syrup into bottles or jars with berries and immediately close with sterile lids.

    The bird cherry compote is ready for the winter, place the jars with the compote upside down, the bottles can be put under a fur coat, placed on their sides. Wrap the containers with compote well and let them cool completely.

They treated me to some bird cherry berries and I decided to close the jar of bird cherry compote for the winter (I’ve never had to make it before). Since I only used half of the syrup for a liter jar, I added a glass of bird cherry to the rest, diluted it with water to taste, added a circle of lemon and cooked a simple compote. I liked it!
