Beef stew in sour cream sauce
Ingredients
Step-by-step preparation
STEP 1
How to make beef stewed in sour cream sauce? Prepare all the necessary ingredients. It is better to take young beef, tenderloin, such meat will turn out even softer and more tender, tastier and juicier. If you use frozen meat, defrost it first. Read about all the intricacies of proper defrosting in a separate article, link at the end of the recipe. Rinse the meat and remove all films and veins. Cut the beef into small pieces about 1 cm thick.
STEP 2
Place the prepared meat in a dry, heated frying pan and let the excess liquid evaporate from it.
STEP 3
Pour vegetable oil into the frying pan and fry the meat, stirring, over medium heat until lightly browned on all sides. Read about how to choose the ideal frying pan, as well as how to choose the right vegetable oil, in separate articles, links at the end of the recipe.
STEP 4
Peel the onion and cut in half. Cut half the onion into feathers, half into half rings. This way, part of the onion will turn into sauce, and part will be visually visible in the dish. Transfer the meat from the frying pan to a plate, and fry the chopped onion in the remaining oil until transparent. Add more oil if necessary.
STEP 5
Place meat and onions in a deep frying pan, saucepan or saucepan. Add spices: a few bay leaves, black peppercorns, freshly ground black pepper and salt to taste. If desired, you can add some more spices.
STEP 6
Add sour cream. It is better to use sour cream with a high percentage of fat content; it will make the meat softer and juicier. Read about all the intricacies of using sour cream for sauce in the article at the link at the end of the recipe. Mix everything well. Dissolve the flour in a glass of warm water and pour this mixture into the saucepan with the meat. You can immediately put the flour in a saucepan with meat and sour cream, but then it will be difficult to avoid the formation of lumps, the flour will not mix well.
STEP 7
There should be enough liquid in the saucepan to cover the meat a couple of centimeters above. If it is less, you can add water and stir. Place the saucepan with the beef over medium heat and simmer for about 1 hour with the lid closed. During stewing, you need to check the condition of the meat, stir it, if there is too little liquid, you need to add more hot water. Let the finished beef stand for a while under the lid.
STEP 8
Serve the stewed beef with a side dish of various cereals, mashed potatoes or pasta, topped with sour cream sauce and gravy from a saucepan. Bon appetit!
