STEP 1

So, let's prepare a piece of meat by patting it dry with napkins or a towel. Let's cut off all the veins and, in order not to waste time, put the frying pan on gas.
STEP 2

Let it sit for another minute, and then, patting it with your palms, rub the spices into it (it’s better if you immediately grind the spices directly onto the piece) and sprinkle with Italian herbs (or your favorite).
STEP 3

And then anoint it with vegetable oil, also lightly rubbing it with your hands. You can salt steaks using this tapa (it’s better to use coarser salt).
STEP 4

Let's put a frying pan with a thick bottom on the fire (it would be nice to take a ribbed grill pan, then the pattern will be beautiful). It needs to be heated thoroughly (to a slight haze), just like oil. Put the prepared pieces of meat into it.
STEP 5

We will fry the steak at Rare level (raw with blood). Fry for 1-1.5 minutes. over high heat, covering the meat with a cap of thyme or herbs that you like best
STEP 6

And then you need to quickly turn the piece of meat over to the other side, not forgetting to put a new portion of thyme on this side and sprinkle with chopped chili pepper. Fry over medium heat for a minute and a half on both sides (depending on thickness).
STEP 7

Next there are several paths. You can wrap it in foil and wait for the steak to get there. This is not a bad idea, by the way.
STEP 8

It turns out juicy and tender, especially if you put a piece of butter on top. I decided to add fresh thyme and leave the chili, which after frying is not so vigorous. The steak turned out flavorful! Or you can put it in the oven, but it will be different.
