Beef jellied meat with gelatin
Step-by-step preparation
STEP 1
How to cook classic homemade beef jellied meat with gelatin? To begin, prepare the necessary ingredients according to the list. You can replace the beef shoulder with another part of the carcass, for example, hip, neck, etc.
STEP 2
Cut the celery root in half.
STEP 3
Rinse the meat, separate from the bones. Place beef bones, peeled onions, carrots and celery in a saucepan. Add allspice corns and garlic. Pour in water. Bring the broth to a boil and simmer over low heat, skimming off any foam, for about 1 hour.
STEP 4
After 30 minutes from the start of cooking, add sprigs of dill, parsley and salt to the broth.
STEP 5
While the broth is cooking, cut the beef into large pieces.
STEP 6
Place the meat in a baking dish lined with foil and place in an oven preheated to 180°C. Bake for about 50 minutes or longer until done. The exact time depends on your oven, the size of the meat pieces and the selected cut of carcass. To prevent the meat from drying out, it is better to initially cover the pan with foil. If you wish, you can not bake the meat, but boil it together with vegetables until tender in 3 liters of water for 1.5-2 hours until soft.
STEP 7
Pour 100 ml of cold water over the gelatin and leave to swell for 10 minutes.
STEP 8
Strain the broth and return to medium heat.
STEP 9
Pour the swollen gelatin into a saucepan with hot broth and stir until completely dissolved. Do not bring to a boil.
STEP 10
Pour a thin layer of broth with gelatin into the jellied meat molds and set in the refrigerator for 2 hours.
STEP 11
Cut the baked beef into small pieces or separate it into fibers by hand. If desired, you can salt and pepper the meat.
STEP 12
Spread the meat over the cooled broth. Pour the remaining broth on top. If desired, decorate the jellied meat with boiled carrots. Place the beef jellied meat in the refrigerator for 6-8 hours until completely frozen. Bon appetit!
