STEP 1

Rinse the dry beans thoroughly to remove any remaining husks and soak them in water overnight; this will make them softer and reduce their cooking time. You can add baking soda to the soaking water, this will prevent bloating. Add garlic, bay leaf to the beans, you can also add a little vegetable oil, it not only gives taste, but also reduces the cooking time. Cook until done.
STEP 2

While the beans are cooking, you need to prepare the sauce. Finely chop the onion, grate the carrots and fry them in vegetable oil. Add tomato paste (for color), a little water and tomato juice, salt and pepper, if the sauce turns out sour, add a little sugar, and simmer until done.
STEP 3

Add boiled beans to the prepared sauce, after removing the bay leaf and garlic from them and simmer for another 10 minutes. Allow the dish to cool slightly and you can serve.
