This salad is an excellent way to add “non-marketable” vegetables, not very beautiful tomatoes, bell peppers and large carrots. It is better to use beans that are milky ripe; the more mature ones have a hard shell.

    Fill them with cold water, put on the fire, bring to a boil, reduce the heat to medium and cook for 15 minutes. Then drain the water, fill it with clean cold water, cook again for 15 minutes and drain the water. And we repeat this procedure again.

    While the beans are cooking, prepare the remaining vegetables. We wash the bell pepper under running water, remove the stalk and seeds. Cut into strips.

    Wash the carrots, peel and grate on a medium grater.

    Wash the tomatoes and cut them into cubes. It is better to take tomatoes that are not very ripe and hard, so that they do not turn into tomato paste while cooking the salad.

    The beans, boiled three times for 15 minutes each, are ready for further processing; drain the water from them through a colander. Their specific smell should disappear, and they themselves will become soft. Place the beans and other vegetables in a large metal container. Add sugar and salt, ground black pepper, vinegar, vegetable oil, water, mix and place on medium heat.

    Cook for about an hour, stirring occasionally so that the vegetables do not burn. In the meantime, sterilize the jars. This can be done in a water bath or in the oven, whichever is more convenient for you.

    We take a sample; the liquid should almost all evaporate. If the carrots have become soft, then remove the container from the heat. We put the hot salad in jars, roll them up or screw them with sterilized lids. Turn the jars upside down, cover with a blanket and let cool at room temperature.
