Ancient Lenten salad of mushrooms and pickled cucumbers
An undeservedly forgotten salad recipe for winter Lent! The recipe is very simple; all the ingredients for it will almost certainly be found in any home in winter. And yet, for some reason I had never tried it in my life before I accidentally saw it in a brochure with Lenten dishes, it seems, from a church. This happened more than ten years ago. I don’t know, maybe this recipe has already become widespread, but for me it was a pleasant discovery from the field of pre-revolutionary Russian Lenten cuisine.

Step-by-step preparation
STEP 1
I apologize, I already had boiled potatoes (in their jackets) from yesterday. In this case, the salad preparation time will generally be about five minutes, which is why I especially love it.
STEP 2
Peel the onions and potatoes. Cut the cucumbers and potatoes into larger pieces, onions - whatever you like, I made rings purely so that it would look better in the photo.
STEP 3
Mix all ingredients - ready!

Thanks for the recipe! I’ve never heard of such a salad; in our country, sauerkraut usually goes in a vinaigrette and simply with onions and vegetable oil. Now I need to try this salad too.
