Step-by-step preparation
STEP 1
To prepare adjika we need bell pepper - 3 kg
STEP 2
Wash the bell pepper thoroughly and remove the seeds.
STEP 3
Wash and clean the hot peppers. It is better to do this with gloves.
STEP 4
Peeling onions and garlic
STEP 5
Separately, pass the onion through a meat grinder.
STEP 6
Separately garlic
STEP 7
We also pass the pepper through a meat grinder separately from the onions and garlic.
STEP 8
Grind coriander in a mill
STEP 9
Pour vegetable oil into a hot frying pan.
STEP 10
Add onion, after five minutes garlic.
STEP 11
Lastly, add the pepper.
STEP 12
Simmer the resulting mixture until golden brown. When the mixture is ready, add tomato paste and after boiling, add chopped coriander and salt. Simmer for about 20 minutes until fully cooked.
STEP 13
We sterilize the jars in the oven.
STEP 14
Place the fully prepared Armenian adjika into sterile jars and roll up the lids. With this option, the shelf life of adjika is much longer.
STEP 15
Armenian adjika prepared according to this recipe is a tasty and unusual dish. It is recommended to consume adjika with meat, fish, and potatoes.
