Why the cake was called a kiss is now unknown to anyone. Although there is probably some kind of legend about this. It is believed that meringue cake, or rather meringue, was invented by a certain chef named Gasparini. However, making this same meringue cake will require a lot of patience and time. The meringue must not be baked, otherwise nothing will work. They need to be carefully dried over low heat, allowing them to rise evenly and become airy. A meringue cake is very easy to spoil - the meringue inside may remain “raw” as it bakes. Sometimes starch is also added to the meringue cake, but not potato starch, but corn starch. Meringue can be seasoned with vanilla for flavor.
