STEP 1

Prepare a saucepan with water and place it on the stove. At this time, beat the whites with sugar for about 1 minute.

Our water has already boiled, we turn down the heat, the water should boil little by little. Place the cup on this saucepan. And now beat in a water bath. Be careful with boiling water. Water should not get into the whites and the cup should not touch the water. After 5 minutes, add citric acid and continue whisking. Beat in a water bath for just 10 minutes. The temperature of the cream should be 63 degrees.
STEP 5
After 10 minutes, put the cup on the table and continue whisking without steam.
STEP 6
Beat for 4-5 minutes until the cream cools. When the cream begins to shine and curl onto the beaters, it is ready.
STEP 7
After cooling, the cream can be used to decorate cakes. You can also make meringues or oven-dried flowers from this cream. To do this, put the meringue on paper and put it in the oven for 90 minutes at one hundred degrees. Bon appetit!
