Vegan Coconut Cakes

Delicious decoration for a vegetarian table! This brownie recipe uses condensed milk instead of eggs, making it perfect for vegetarians. And these cakes have their own magic: they disappear from the plate the same day you cook them.

    1. Pour condensed milk into a bowl, whisk for 2 minutes. Turn the oven to 180 degrees so that it has time to warm up.

    2. Add half of the coconut flakes. Mix well.

    3. Add the remaining coconut and mix well again. It’s very good if the resulting mass looks like in this picture. The dough should not be soft like butter, and if this happens, add a little coconut to achieve the desired consistency. Add half a teaspoon (about 2 ml) of vanilla essence. Mix well.

    4. The resulting mass will stick to your hands, so grease your palms with vegetable oil and only then begin to separate small portions from the mass, form balls and flatten them slightly. Place the resulting balls on a well-greased baking sheet. It is better if the balls are approximately the same size. I divide the mass into 9 parts - cakes. If you need more, simply increase the amount of ingredients.

    5. Decoration! Cut each cherry in half lengthwise and press lightly into the cake.

    6. Bake the cakes in a preheated oven at 180 degrees for 15-20 minutes. Until they turn slightly golden (like in the picture) all over. Try to place the cakes in the center of the oven, equally far from the heating elements, so they will bake evenly.

    8. After 2-3 minutes, carefully lift the cakes with a spatula and transfer to a plate to cool. These cakes are very good with milk or tea. Makes 9 pieces.

For some reason, the middle fell out for some. And from the ingredients for 18 servings, 12 medium “cakes” were obtained.
