Unleavened dough made with kefir
Ingredients
Step-by-step preparation
STEP 1
Warm the kefir slightly, just don’t overheat it. Pour sugar, salt into it, pour in vegetable oil, mix everything well. DO NOT ADD SODA!!! Gradually add flour. The dough should be elastic, but in no case tight, so do not add all the flour at once, but only not in very large portions. If the dough turns out to be very tight, then it will not have air bubbles, which give our dough an amazing taste.
STEP 2
Sprinkle the table with flour and roll out the dough into a layer 1 cm thick. Sprinkle 1/3 of the baking soda over the entire layer of dough. It is advisable to do this evenly over the entire surface.
STEP 3
We fold the dough into three layers. First, fold 1/3 of the part from one edge
STEP 4
then from another
STEP 5
Then again in three layers
STEP 6
The result is a package like this
STEP 7
We roll it out again into a layer 1 cm thick, sprinkle it with soda and fold it in the same way. Then we roll it out again and repeat everything again. As a result, we have to roll it out 3 times, sprinkle it with soda and fold the dough. Each time the dough becomes more fluffier and more porous.
STEP 8
The dough is ready, cover it with a bag or any container and leave for 40 minutes so that it rises.
