Sweet pies made from yeast dough
Step-by-step preparation
STEP 1
How to make sweet pastries from yeast dough in the oven? Prepare the necessary ingredients for this. The filling for such pies can be any fruit or berries. The milk should be warm, but not hot.
STEP 2
To prepare the dough, mix warm milk (35-38 degrees) with salt, sugar and yeast. The milk should be warm, but not hot, otherwise the yeast in it will die. Read more about the intricacies of working with yeast in a separate article. There is a link to it at the end of the recipe.
STEP 3
Stir in 1/3 of the flour and leave to stand for a while until bubbles begin to appear on the surface. This means that the yeast has begun its work.
STEP 4
Then add melted butter (not hot!) and eggs to the dough.
STEP 5
Add sifted flour and knead the dough. You may need a little more or less flour than indicated in the recipe. Therefore, be guided by the consistency of the finished dough. You can read more about the properties of flour by following the link at the end of the recipe.
STEP 6
The dough turns out soft and does not stick to your hands. Place it in a bowl, cover with a towel and leave in a warm place to rise for 1 hour.
STEP 7
At this time, prepare the fillings for sweet yeast pies. For berries, I take 200 grams of frozen cherries and lingonberries. Let them melt a little so that the juice appears. Mix them with sugar (100 g each) and starch (1 tbsp each) and put on fire. If the berries are fresh, remove the pits from the cherries. Remember the berries themselves a little so that the juice appears.
STEP 8
Bring the filling to a boil while stirring constantly. If you want a more uniform filling, you can grind it with an immersion blender. It will thicken when heated. Cool the finished fillings completely.
STEP 9
You can also make the filling from fruits. I take apples. But you can take pears, apricots or plums. Core the apples and cut into cubes.
STEP 10
Melt butter in a frying pan and add sugar. Place the chopped apples and simmer for 5-7 minutes to evaporate excess moisture. Then cool the filling.
STEP 11
Remember the finished dough and divide it into pieces. The smaller the pieces, the more pies there will be. But then they will be small!
STEP 12
Place the prepared fillings onto the dough flatbreads. Pinch the edges and form into pies.
STEP 13

Let them sit for 10-15 minutes. Then brush the top of the pies with egg yolk and place in the oven, preheated to 180 degrees, for 20-30 minutes. Be guided by your oven.
STEP 14
The finished pies will increase slightly in size and become rosy and fragrant. Remove them from the oven and cool slightly. Bon appetit!
