STEP 1
Prepare the ingredients. For the base of the cake, we will need puff pastry without yeast, which must first be thawed.
STEP 2
Roll out the puff pastry into a not very thin circle, slightly larger in diameter than the baking pan.
STEP 3
Place in a parchment-lined baking pan, making edges. The sides can also be made from leftover dough.
STEP 4
Cover the bottom and sides of the dough with parchment and pour out the weight. I have beans. This is necessary so that the dough retains its shape and does not rise during baking.
STEP 5
Bake the cake for 15 minutes at 200°C. Then remove the weight and parchment and bake for another 10 minutes. You can bake the entire 25 minutes with a load, but you need to make sure that the dough does not burn on the bottom. Remove the finished cake from the mold and cool.
STEP 6
Filling. To prepare the filling we will need: strawberries, seedless quiche-mish grapes, apricots (I used smooth ones), honeysuckle or other blue or blue berries to taste (blueberries, currants). You need to select by color so that the pie combines 4 different spectrums: green, yellow, red and blue.
STEP 7
Cut the grapes in half. Wash the strawberries, dry them, remove the stems. Cut large berries into quarters, medium ones - in half, small ones can be left whole. Cut apricots in half, remove pits. Cut each half into 2-3 more pieces. Sort the honeysuckle, wash and dry.
STEP 8
Cream. To prepare the cream we will need: whipping cream (33-35% fat), powdered sugar and vanilla sugar.
STEP 9
Beat the chilled cream into a strong, stable foam along with powdered sugar and vanilla sugar. When you turn the bowl over, the whipped cream should remain in the bowl.
STEP 10
Spread the cream onto the completely cooled cake layer and smooth it out.
STEP 11
Using a spatula, make furrows in the cream to divide the cake into 4 equal sections. Arrange the grapes, apricots, strawberries and honeysuckle into sectors. Place the pie in the refrigerator for 1-2 hours.
STEP 12
Cut the finished cake into pieces and serve. Bon appetit!
