STEP 1

How to make strawberry jam for the winter? Prepare the products according to the list. It doesn’t matter what kind of strawberries you take: from the store, from the forest or from your own garden. The main thing is that it is fresh, fragrant, with whole berries. And this is a bouquet of strawberries for you to get in the mood!))
STEP 2

Carefully sort the strawberries, remove the stem and leaves. Remove all wrinkled and spoiled berries, but you can leave the unripe, greenish ones / they will not spoil the jam /. This is the most tedious and time-consuming process, but clean berries are better for jam, so sort them out! Then carefully rinse the strawberries under running water / I put some berries in a colander and pour them with a weak pressure of cool water from the shower head /.
STEP 3

Let the water drain and immediately pour into the cooking basin. Alternate layers of berries and sugar (I divide the berries into two bowls
STEP 4

First turn on low heat and gently stir the berries. After the sugar has completely dissolved in the released juice, increase the heat to medium and bring to a boil. At the same time, foam will begin to stand out. Gently stir the jam, let the mixture boil twice, stirring the berries each time to ensure even heating.
STEP 5

Remove the bowl of strawberries from the stove, scoop the foam into the center and skim it off with a spoon. To do this, I gently rock my pelvis left and right, back and forth. But do it very carefully, because it is easy to get burned, be careful!
STEP 6

Add the remaining sugar to the hot jam and stir well until completely dissolved. Let the jam cool completely and set for 3-4 hours. Next, repeat the boiling steps twice. After the third boil at the end of cooking, add citric acid to the jam and skim off the foam.
STEP 7

Prepare glass jars: wash them with baking soda, rinse well under running water. Place wet in a cold oven with the neck down, arrange the lids. Turn on the oven at 150 degrees, after reaching the set temperature, sterilize 0.5l jars for 10 minutes, 1l jars for 15 minutes. For me, this sterilization method is the most convenient, but you can sterilize jars in the microwave or steam.
STEP 8

Pour the hot jam into dry, still warm, sterilized jars. Immediately tighten the jars with hot jam, wipe them clean and, turning them over onto the lid, let them cool. Store the jam in the cellar or refrigerator. It can be stored for up to two years.
