STEP 1

How to make strawberry jam? Prepare the necessary ingredients for this. Choose fresh, undamaged strawberries. I prefer small ones so that they don’t have to be cut into several pieces.
STEP 2

Pour plenty of water over the berries, rinse well and catch. I do not recommend putting it in a colander, since the sand is washed off the berries and sinks to the bottom of the bowl, and the berries remain on the surface of the water. If you throw everything into a colander, then all the sand will again be on the berries. Therefore, I catch the berries with my hands and put them in a colander to drain off excess water.
STEP 3

Remove the stem from the washed berries and place them in a bowl.
STEP 4

Mix half the sugar, citric acid and a couple of pinches of salt.
STEP 5

Cover the berries with this mixture and sprinkle with alcohol. Leave the berries to stand for several hours so that they release their juice. I usually leave this on overnight.
STEP 6

A sufficient amount of juice has appeared from the berries.
STEP 7

Place everything in a cooking bowl and place on the fire. Add the remaining sugar. If the berries are sweet, then you can add a little less sugar.
STEP 8

Bring the berries to a boil. Stir until the sugar dissolves. Turn the heat to low and cook the berries for 25-40 minutes. Stir so that a lot of foam does not form.
STEP 9

During cooking, the whole mass will thicken. Remove from heat and cool. During cooling, all the foam will subside and the confiture will become a uniform, rich color.
STEP 10

Prepare the jars. Wash them well and sterilize them in any convenient way. This can be done in the oven, in the microwave or over hot steam. Pour boiling water over the lids.
STEP 11

Warm confiture can be placed in prepared jars and closed with lids.
STEP 12

The confiture turns out very beautiful, tasty and aromatic! Store the jars in a cool place. Enjoy your treat!
