Excellent dish: Rabbit in a cauldron stewed with potatoes! I really love rabbit meat in any form. I had a whole carcass of a large rabbit, so I decided to stew it all. All this wealth would not fit into my cauldron, so I used a wide saucepan, it is convenient to mix pieces of meat and potatoes in it. What was interesting about the recipe is that it uses fried carrots and onions, and also adds sliced carrots. Roasting made the dish tender, satisfying, and rich in vegetable juices. I stewed the meat for 1.5 hours. During this time, it became incredibly soft, melting, literally falling apart into fibers. Then I added potatoes and carrots and simmered until done. I didn’t add any tomato, I didn’t want a sour note) It turned out to be an amazing dish, hearty and very tasty. My mother-in-law calls it "gravy" because of the amount of gravy. And the gravy turned out great, I ate it instead of soup) I didn’t add any spices either, I liked this “natural” taste! I highly recommend using this recipe if you happen to have a rabbit carcass in the freezer)
