STEP 1
How to stew a hare with vegetables and garlic in a frying pan? The first step is to prepare the hare meat. Remove the skin from the hare, remove the entrails and cut the carcass into portions. Be sure to remove all membranes, otherwise the finished meat will be difficult to chew.
STEP 2
To avoid a specific smell, the hare meat needs to be soaked in cold water. Place the meat in a deep container, fill it with water to the top and put it in the refrigerator. The water needs to be changed periodically. Every 2-3 hours, drain the water and blood and fill the meat with fresh water. The soaking time depends on the size and age of the game. I had a big hare, I soaked it for a day.
STEP 3
Prepare dry spices. Select their quantity and composition to suit your taste. The recipe used a mixture of ground red peppers, coriander, dried basil and ground allspice. Peel the garlic and rinse the cloves in clean water.
STEP 4
Pass the garlic through a press or grate it on a fine grater. Mix spices, garlic and salt until smooth. Adjust the amount of salt to taste.
STEP 5
After soaking, dry each piece of hare with paper towels to remove any remaining water. Add spices to the meat.
STEP 6
Using massaging movements, distribute seasonings evenly throughout all pieces. Leave the meat in the refrigerator to marinate for a while. The longer the pieces sit in aromatic herbs, the tastier the hare meat will be.
STEP 7
Heat refined vegetable oil in a frying pan with high edges and a thick bottom. Send the hare to fry over high heat. When the pieces are covered with a delicious golden crust on all sides, you can proceed to the next step.
STEP 8
Pour a small amount of water into the pan so that it lightly covers the meat. After boiling, reduce the stove flame to medium-low and cook the game under a closed lid until the pieces are soft. I stewed the hare for about one and a half to two hours. Periodically open the lid and check if there is liquid in the pan. If necessary, add a little boiling water so that the hare does not burn.
STEP 9
At this time, prepare the vegetables. Peel the onions and carrots and wash in cold water. Cut the carrots into cubes and the onion into half rings or a little smaller. Place the vegetables in the frying pan.
STEP 10
Stir and simmer covered until the carrots are soft. It will take 10 to 20 minutes.
STEP 11
Sprinkle the finished dish with finely chopped herbs. Dill, parsley or young onions are perfect.
STEP 12
Serve the dish before it cools down.
STEP 13
The result is amazingly soft, flavorful meat.
