Squash without sterilization
Step-by-step preparation
STEP 1
How to pickle squash without sterilization? Prepare all the necessary products. Any squash is suitable: different varieties, both large and small. But it’s the small ones of different colors that will look most beautiful in a jar.
STEP 2
Wash the squash, dry it, remove the stalks. Cut large fruits into several pieces.
STEP 3
Boil water in a saucepan, add squash.
STEP 4
Cook for about 7 minutes after boiling.
STEP 5
While the squash is cooking, prepare the marinade. Mix water, salt, sugar and vinegar. The recipe uses table vinegar 6-9%. If you have vinegar essence, dilute it with water in a ratio of 1:8. Mix well so that the salt and sugar dissolve.
STEP 6
Sterilize the jars in any convenient way. I pour some water into the jars and put them in the microwave for 5-7 minutes. But you can also sterilize the jars in the oven at 100 degrees for about 30 minutes or simply hold them over steam. It is enough to boil the lids for 5 minutes.
STEP 7
Place umbrellas or dill seeds in jars.
STEP 8
A clove of garlic. If you wish, you can add some other spices and seasonings: bay leaf, allspice, chili pepper.
STEP 9
Fill the jars with squash.
STEP 10
Pour brine on top up to the shoulders.
STEP 11
And fill it up to the neck with the boiling water in which the squash was cooked.
STEP 12
Cover tightly with lids or roll using a machine. This product does not require sterilization and is perfectly stored without refrigeration.
STEP 13
