STEP 1

How to make squash caviar with garlic and tomato paste and mayonnaise? Prepare all the necessary products. Zucchini caviar, as a rule, is prepared during the vegetable season, so take fresh and seasonal vegetables. As for zucchini, they can be anything: white fruit and zucchini.
STEP 2

Peel the onion and cut into cubes.
STEP 3

Peel the zucchini if necessary, remove large seeds and cut into cubes.
STEP 4

Prepare a vessel for cooking caviar: it is best if it is a pan with a thick bottom - the caviar will not burn in it. Place chopped onions and zucchini in it.
STEP 5

Grind the vegetables until smooth using a blender or meat grinder.
STEP 6

Add chopped garlic. Bring to a boil over low heat and cook for about an hour.
STEP 7

Add salt, sugar.
STEP 8

Pour in vegetable oil.

Add tomato paste. It can be replaced with fresh chopped tomatoes.

Pour in vinegar. This recipe uses table vinegar 6-9%.

Cook for another 30 minutes.

Sterilize the jars in any convenient way. I pour some water into them and put them in the microwave for 5-7 minutes. Boil the lids for 5 minutes.
