Sponge cake without eggs in the oven

Simple, made from ordinary products, budget-friendly! An eggless sponge cake in the oven is a fluffy and airy dessert that can be made without the usual ingredients. The dough in it rises not due to beaten eggs, but due to the reaction of kefir and soda. The biscuit has a porous and moist crumb.

  1. STEP 1

    STEP 1

How to make a sponge cake without eggs in the oven? Prepare your food. Kefir is suitable for any fat content, it doesn’t matter. Take refined, odorless vegetable oil. The amount of flour may differ from that stated in the recipe - you will look at the consistency of the dough. It took me less.

  2. STEP 2

    STEP 2

Pour kefir into a saucepan and heat on the stove until warm. Make the heat low and stir constantly, otherwise the kefir may separate. Pour the kefir into a bowl and add baking soda. Stir and immediately add sugar. Stir the mixture well again to dissolve the sugar grains. Leave to stand for 5 minutes.

  3. STEP 3

    STEP 3

During this time, the soda will react with the acid contained in the kefir, resulting in the release of carbon dioxide, which will raise the biscuit. The mass will increase in volume, and a foam cap will form on the surface. Pour in vegetable oil, stir.

  4. STEP 4

    STEP 4

Start pouring flour into the kefir mixture in portions, sifting it through a sieve. By doing this you will not only remove possible debris, but also saturate the flour with oxygen, which will make the baked goods more fluffy. After each addition, knead the dough with a whisk. At the very end, add a little vanilla.

  5. STEP 5

    STEP 5

The consistency of the dough should be like thick sour cream. I still have some of the flour.

  6. STEP 6

    STEP 6

Take a suitable baking dish. It can be anything - detachable, silicone, glass. I took a sliding ring and used foil instead of the bottom. Grease the mold with a small amount of vegetable oil. Pour the dough into it.

  7. STEP 7

    STEP 7

Bake the biscuit in the oven, preheated to 180°C, for 30-40 minutes. The exact time will depend on the features of your oven. Check readiness with a wooden skewer - it should come out dry from the middle.

  8. STEP 8

    STEP 8

Remove the finished biscuit from the oven, cool and remove from the mold. When serving, sprinkle the top with powdered sugar. Bon appetit!

I was preparing a cake for March 8th. For the base, I prepared a sponge cake without eggs. I used kefir with a fat content of 3.2 percent and premium flour. I used almost 350 grams of flour, a little less. I baked the sponge cake in a one-piece pan with a diameter of 20 cm for 40 minutes. The sponge cake turned out fluffy, soft, and also fragrant. I easily cut the cooled sponge cake into three layers. Its crumb is quite porous. The cake with it turned out delicious.katushafin, thank you very much for the recipe!
