Soup with minced meat and beans

Step-by-step preparation
STEP 1
To make the soup with beans and minced meat especially tasty, we take two types of meat - chicken and beef. This is the meat from which we will prepare minced meat ourselves. We will also need vegetables - onions, carrots, sweet peppers, tomatoes, herbs. We take dry beans; the soup from them turns out to be more satisfying. For frying we use sunflower oil. And for aroma - garlic, bay leaf and dill.
STEP 2
Be sure to soak the beans in cold water for at least an hour. Then drain the water and wash the beans.
STEP 3
Fill the beans with water again and set to cook. Cooking time is 2 hours on oil fire from the moment of boiling. During this time, almost all the water will boil away. You can boil the beans ahead of time.
STEP 4
While the beans are cooking, prepare the minced meat - grind the meat in a meat grinder, preferably twice.
STEP 5
We also prepare vegetables, wash and peel them.
STEP 6
While the water is boiling in the soup pot, cut the onion and bell pepper into small cubes.
STEP 7
We also cut the carrots into small cubes.
STEP 8
First pour the chopped carrots into the boiling water.
STEP 9
After 5 minutes, add a bay leaf to the carrots in the pan.
STEP 10
Place the minced meat in sunflower oil heated in a frying pan and begin to fry over high heat, kneading and stirring until it becomes crumbly. Fry the minced meat for 3 minutes.
STEP 11
Then add chopped onion and pepper, half a tablespoon of salt to the minced meat and continue to fry over medium heat, stirring, in an open frying pan.
STEP 12
Meanwhile, cut the tomato into small cubes.
STEP 13
After 10 minutes, add the tomato to the minced meat, mix and cook the minced meat with vegetables for another 10 minutes over medium heat.
STEP 14
After 10 minutes, lay out boiled beans in a pan to the carrot.
STEP 15
Following the beans, add minced meat and vegetables to the soup.
STEP 16
Add salt to the soup and mix.
STEP 17
Cover the pan with a lid and let the soup simmer over low heat for 5 minutes.
STEP 18
Now chop the greens and garlic cloves with a knife.
STEP 19
Add the herbs and garlic to the soup, stir and after a minute turn off the heat. Let the soup sit for another 5 minutes under the lid and serve.
STEP 20
Pour the delicious soup with minced meat and beans into bowls and serve for lunch. This soup will be even tastier if you season it with sour cream when serving.
