Step-by-step preparation
STEP 1
To prepare apricot marshmallow at home, you need to prepare the necessary ingredients: apricots and sugar.
STEP 2
You will only need ripe apricots. If you come across a more elastic, greenish one, it is better not to use it; it will impart an unpleasant bitterness to the finished product. Wash the apricot and sort out any debris and bad fruits. Remove the seeds and, if necessary, cut off the damaged parts.
STEP 3
Grind the entire apricot with a blender or twist with a meat grinder.
STEP 4
To make the pastille have a more even structure, grind the finished puree through a fine sieve, separating the cake. There will be very little of it.
STEP 5
Pour sugar into the prepared tender apricot puree. If the apricot is sweet enough, and you follow a healthy diet or watch your figure, you can not use sugar at all or replace it with honey.
STEP 6
Mix the mixture thoroughly and place the puree in a baking dish. It must be covered with oiled baking paper. Spread the apricot puree with a spoon into a layer 1-1.5 cm thick.
STEP 7
Preheat the oven to 60 degrees. Place the mold in it and dry the apricot marshmallow for about 3 hours with the door ajar.
STEP 8
The finished apricot pastille has a dense consistency, does not stick to your hands and rolls up well.
STEP 9
The finished delicacy can be cut into wide or narrow strips and rolled into rolls. Store in a tightly closed jar in the refrigerator. Bon appetit. Cook with love.
