Simple and quick cupcake with raisins

STEP 1

Prepare the dough. Take the butter out of the refrigerator in advance and leave it to sit at room temperature until it becomes soft. Place the melted butter in a bowl and add sugar to it. We rub everything thoroughly.
STEP 2

Beat in, add salt and mix.
STEP 3

In a separate bowl, mix the sifted flour with baking powder, add the raisins and mix. We take seedless raisins, they need to be washed in water in advance and allowed to dry (to do this, the raisins can be laid out on a dry towel so that the moisture leaves them). We mix it with flour first so that when baking the cake the raisins are evenly distributed and do not settle to the bottom. If you don’t roll it in flour first, then only the bottom part of the cake will contain raisins.
STEP 4

Add the flour mixture to the egg-butter mixture. Mix again. The result should be a mass similar to thick sour cream.
STEP 5

Place the dough in a tall rectangular pan, greased and sprinkled with breadcrumbs.
STEP 6

Bake the cake in an oven preheated to 210 degrees for about 40-50 minutes. It will rise well, bake and acquire a golden crust. We check the readiness of the cake, like any other similar baked goods, using a match or a toothpick - we make several punctures and see if there are any traces of raw dough left on it. If everything is good, then the cake is definitely baked and can be removed from the oven.
STEP 7

Let the cake cool a little, cut into small pieces and serve with tea, cocoa, compote, coffee, etc. Bon appetit!
