STEP 1

Prepare all ingredients. Take 2 sheets of seaweed (I used red porphyry nori), sesame oil and spices as listed. Cane sugar can be replaced with regular white sugar. Do not under any circumstances replace sesame oil with another, otherwise the taste and beneficial qualities of the product will be lost. You can experiment with spices.
STEP 2

Place brown sugar and all the spices in a small bowl: ground chili, ground ginger and salt. Mix well. This recipe used classic spices for Japanese dishes, but they can be replaced. The main thing is to leave granulated sugar in the ingredients.
STEP 3

Take the first sheet of nori and place its shiny surface on the table, and brush the rough surface with aromatic sesame oil using a pastry brush. Due to the fact that it is the rough surface of the algae that is lubricated, the spices and sugar practically do not fall off. On the shiny side, these spices would fall off much more.
STEP 4

Lightly stir the spices again and spread half of the spices evenly onto the first sheet of nori. Brush the second sheet of seaweed with sesame oil and season with the remaining spice mixture.
STEP 5

Take a large diameter frying pan, heat it very well, you no longer need to add oil. Once the pan is hot, lower the temperature to medium and add the first sheet of nori, shiny side down. After literally 30 seconds, turn over the seaweed sheet and fry lightly, also for about 30 seconds. Remove the first sheet of nori and do the same with the second sheet.
STEP 6

Use scissors to randomly cut the fried seaweed into triangles, squares or diamond shapes. Before serving on top, the resulting chips can be lightly seasoned with spices.
