Step-by-step preparation
STEP 1
How to make a shortbread cake with jam? Prepare the indicated products. Take good quality butter, without milk fat substitutes. The jam can be of any variety, but apple or quince is preferable - its sourness in taste emphasizes the sweetness of the shortcrust pastry. Turn on the oven to 200 degrees in advance.
STEP 2
Place the butter in a deep container and melt in a water bath or in the microwave until almost boiling. For information on how to do this correctly, read at the end of the recipe.
STEP 3
Pour the melted butter into a deep bowl and cool slightly, then beat in the egg, add granulated sugar, and add a pinch of salt. Thoroughly beat the entire contents of the container until smooth using a whisk or mixer at low speed.
STEP 4
Sift the flour into a bowl and knead a tight, plastic shortbread dough. Thanks to sifting, the flour will be saturated with oxygen, and the finished dough will be more tender. STEP 5
If you have free time, wrap the dough in cling film and refrigerate for about 20-30 minutes. If you don’t have time, then immediately start rolling out and baking.
STEP 6
Spread parchment paper on the work surface, place the shortbread dough on it and roll it into a rectangular layer 1 cm thick - it does not have to be even, since the edges will be cut off after baking and will turn into crumbs. STEP 7
Bake the dough layer in the oven at 200 C for about 12-15 minutes, without browning too much. The exact time depends on your oven. You can learn about the operating features of ovens by reading a separate article, link at the end of the recipe. Judge the resulting cake.
STEP 8
Cut off the edges, making a rectangle or square out of the cake.
STEP 9
Cut the cake into strips 10*5 cm. From this volume of products I got 4 strips and scraps for crumbs. Place the trimmings in a deep container and chop them by hand or in the bowl of a food processor.
STEP 10
Lubricate two strips with the prepared jam, applying it in a thick layer.
STEP 11
Place the remaining two strips on top.
STEP 12
Brush the top strips with jam and run a knife along the edges of the cake, removing excess jam. Sprinkle crushed crumbs on top. Decorate the dessert to your liking and serve with tea or coffee. The shelf life of the cake is 2-3 days, but every day the texture of the dough will become softer. Bon appetit!
