Pour two hundred and fifty milliliters of 33% cream into a saucepan, then bring it on the stove until hot, but not boiling. We adjust the amount of cream in the recipe depending on the purpose for which we are preparing the caramel sweet and salty syrup; if it is to soak the cake, then you need two hundred and fifty milliliters, as in our recipe.
STEP 6

As soon as the sugar syrup in the saucepan has acquired a golden hue, remove it from the stove.
STEP 7

Pour the cream into the saucepan with the syrup in a thin stream, stirring well while adding.
STEP 8

Place the saucepan on the stove and mix all the ingredients well with a whisk.
STEP 9

Place forty grams of butter in a saucepan.
STEP 10

Pour half a teaspoon of sea salt into the saucepan.
STEP 11

Mix all ingredients well in the saucepan again.
STEP 12

Cook the caramel for about two more minutes, remembering to stir during the process, then remove the saucepan from the stove.
