How to quite simply and quickly prepare a seasonal dish of fried eggplants with garlic and cilantro, which without any doubt will appeal to many for its excellent taste? First of all, we prepare the necessary products with spices for preparing an eggplant salad appetizer.
STEP 2

To prepare the dish, first of all, cut the peel from four eggplants, the total weight of which is eight hundred grams, and cut them into small random pieces, which are then placed in a deep bowl, and so that the eggplants do not lose their color, sprinkle them with one tablespoon of fresh lemon juice and mix.
STEP 3

Pour two tablespoons of cornstarch, which can be replaced with potato starch, into a common bowl and mix well.
STEP 4

Take a frying pan and place it on the stove, then pour one hundred and fifty milliliters of vegetable oil into it and heat it over high heat, then add a little salt to taste to the frying pan and place eggplant pieces in it in parts.
STEP 5

Fry the eggplant pieces in a frying pan over medium heat until golden brown on each side.
STEP 6

Place the fried eggplant pieces in a deep plate, then season them with two tablespoons of sweet and spicy tomato sauce.
STEP 7

Add two cloves of garlic to the plate with eggplants, squeeze them through a press and mix all the ingredients.

Transfer the eggplants from the plate to a large bowl, then add cilantro, pre-finely chopped to taste.

Mix all the ingredients well in a bowl and place it in the refrigerator for one hour.
STEP 10

Once the time has passed, place the prepared and infused eggplant appetizer salad into portioned plates and serve.
