But this is not risotto at all, this Italian dish is prepared using a completely different technology, and this is its fundamental difference from other rice dishes. You need not long-grain rice, but round, special starchy varieties (Arborio, Camolino), only they give the desired silky, creamy consistency characteristic of risotto. In no case is it boiled in advance, but fried raw in oil along with onions, and then the broth is added to the bowl in small portions, 1 ladle at a time, when the previous liquid has evaporated. And already in the finished rice, which should be soft, but with a slightly hard center, add butter or cream and Parmesan. Well, then - the ingredients according to the recipe.
