Rice with chicken liver

The dish - rice with chicken liver - is reminiscent of pilaf in its method of preparation, appearance and taste, but it turns out to be a less fatty and high-calorie dish. This dish is prepared just as quickly as regular chicken pilaf, only instead of chicken meat we use chicken liver to prepare it, which is quite cheap, but tasty and healthy.

We take long-grain or steamed rice, rinse it thoroughly until the water becomes clear.

    Peel the onions and finely chop them with a knife.

    Wash the carrots, peel and grate on a coarse grater.

    Wash the chicken liver thoroughly, cut off any fat and film if present. Cut the liver into small pieces and rinse again, carefully squeeze out the water and drain.

    Pour vegetable oil into the frying pan. Let's warm it up. Place carrots and onions in the oil; if you use other vegetables, such as beans, for the dish, immediately add them to the frying pan along with the carrots and onions. Fry the vegetables over medium heat for 5-7 minutes until the onion becomes translucent and the carrots are soft.

    Place the chicken liver into the pan with the vegetables. Immediately mix the ingredients.

    And fry the chicken liver with vegetables for 10 minutes over medium heat, stirring occasionally with a spatula, until the liver brightens.

    Then pour the washed rice into the frying pan with the chicken liver and vegetables and level it over the entire surface of the frying pan. Add salt and ground black pepper. If you wish and taste, you can add any other seasoning. Pour in water so that it exceeds the contents of the pan by one centimeter. Reduce the heat to low and simmer for half an hour under the lid.

    Then remove the lid from the frying pan, the liquid should almost completely evaporate, mix the chicken liver with rice and vegetables, and take a sample. If necessary, you can add any spices or add salt. The dish is ready. Serve the chicken liver with rice to the table with fresh bread and herbs. Bon appetit!

Chicken liver rice is something new for me. I wanted to try making this dish for dinner. I bought chicken liver and prepared the rest of the ingredients; I did not add beans. Fried onions and carrots. Added pieces of liver and simmered a little in a frying pan. Added rice, added water and simmered as described in the recipe. From the spices I added salt, pepper, ground coriander, bay leaf and ground nutmeg. I was pleased with the very simple and quick preparation. The dish came out aromatic, the rice was fluffy, the chicken liver was tender. Somewhat reminiscent of pilaf, but less fatty. An amazingly tasty dish made from very simple ingredients. And a fairly large amount of rice with liver came out. Served with vegetable salad for dinner. We were pleased. Great recipe! I recommend to everyone!
