Red bean lobio salad

STEP 1

How to make red bean lobio salad? Prepare all the necessary ingredients. You can use canned beans instead of fresh beans.
STEP 2

Sort the red beans and rinse. Cover the beans with cold water and leave overnight.
STEP 3

Drain the water and place the beans in a saucepan. Pour fresh water over the beans, put on fire and cook until tender. Finally, add salt to taste.
STEP 4

Place the finished beans in a colander and dry.
STEP 5

Wash the bell pepper and cut into strips.
STEP 6

Chop the walnuts with a knife.
STEP 7

Peel the garlic and chop finely.
STEP 8

Wash the cilantro, dry it and chop it finely.
STEP 9

Heat vegetable oil in a frying pan. Add bell pepper, garlic and a pinch of salt. Fry everything together for 3-4 minutes.
STEP 10

Add suneli hops, hot pepper, bay leaf and a pinch of black pepper to the bell pepper. Simmer everything together, stirring, for about 5 minutes.
STEP 11

Add beans, walnuts, cilantro to the pan and mix everything.
STEP 12

Simmer the lobio for another 2 minutes, then remove the pan from the heat.
STEP 13

Divide the lobio among plates and serve. This salad is good both warm and cold. Bon appetit!
