STEP 1
How to make raspberry liqueur from raspberries at home? Prepare the necessary ingredients. You can take half and half water with vodka. The berries for pouring should be ripe and preferably not frozen. To prepare the liqueur, do not use yellow or white varieties of raspberries. First, pick out the raspberries.
STEP 2
To preserve the aroma, there is no need to wash the berries. But I had to wash them because I bought them at the end of the day at the market, and during this time a lot of dust could accumulate on it. It is better to wash raspberries from a shower head with low pressure. Then let the water drain, throwing the berries in a colander, because raspberries instantly absorb moisture. You can make a solution of water and salt (1 teaspoon of salt per 1 liter) and soak the berries for 8 minutes. This will get rid of the raspberry beetle larvae.
STEP 3
Prepare a jar in which you will make the liqueur. Place some of the berries in a jar and sprinkle some of the sugar on top. Next, add a layer of berries again and sprinkle with sugar again. Repeat layers of raspberries and sugar until the jar is two-thirds full.
STEP 4
Add water (or water with vodka).
STEP 5
Using a masher, mash the berries into a puree.
STEP 6
Cover the neck with a cloth and place in a warm place for 3-4 days.
STEP 7
During this time, the pulp will rise to the top.
STEP 8
When the contents of the jar have fermented and a specific smell appears, install a water seal on the neck. If there is none, then you can get by with a rubber glove, making a small hole in it with a needle.
STEP 9
Leave the jar with the future liqueur in a warm place for a period of several days to two weeks until fermentation ends.
STEP 10
When fermentation is complete, strain the drink through a thick cloth, squeezing the cake well.
STEP 11
Pour the drink into another jar, install a water seal and leave for a few more days. add a little more water if necessary.
STEP 12
When the fermentation in the jar stops and the liqueur becomes transparent, pour it into bottles, straining from the sediment at the bottom. There is no need to top up the bottles to the very top. Send the bottles with the liqueur to a cool place for a few more days.
STEP 13
Raspberry liqueur is ready. It can be stored for no more than 4 years. Enjoy your tasting!
