STEP 1
How to make raspberry compote for the winter? Prepare the necessary ingredients for the compote. You need to take raspberries that are well ripe, but firm and dense, not overripe and soft. Sort the raspberries, remove debris, as well as spoiled and wormy berries.
STEP 2
Rinse the raspberries under cold running water and place in a colander to drain.
STEP 3
It is better to take small jars for compote so that you can quickly drink it after opening. Rinse the jars with cold water and soda, boil the lids. Place the jars in the oven with the neck down, turn on the oven at 150 degrees and sterilize them for about 20 minutes (the volume of the jars is 1 liter). Boil clean filtered water in a kettle. Place raspberries in prepared jars.
STEP 4
Add sugar. If someone thinks that the finished compote is not sweet enough, then you can increase the amount of sugar to taste. Some housewives add citric acid to the compote to make its color bright. But raspberries contain a large amount of vitamin C and additional acid will not improve its taste or make it healthier, so it is better not to add it. Of course, it will not be a rich, bright color, but without additives.
STEP 5
Fill the contents of the jars with boiling water up to the hangers. Immediately seal the jars with sterilized lids.
STEP 6
Place the jars on their sides and start rolling them so that the sugar dissolves. But you need to be extremely careful, do this with the help of oven mitts, since the jars get very hot. Turn the jars with compote upside down, cover with a warm blanket and leave to cool completely at room temperature.
STEP 7
Raspberry compote is ready for the winter. It can be stored at room temperature and in a cool place. Bon appetit!
