Rabbit kebab with lard

STEP 1

For shish kebab according to this recipe, take about 1.5 kg of rabbit and 0.5 kg of lard. Before marinating, soak the rabbit in water for 5-10 hours.
STEP 2

For the spice marinade - thyme, rosemary, marjoram, black pepper, bay leaf, salt 1 teaspoon each. As well as 150 ml vegetable oil and 1 liter white wine. Immediately pour the oil over the spices and leave to release the aroma.
STEP 3

Then cut the onion into half rings, add a teaspoon of salt and mash until the juice releases.
STEP 4

Butcher the rabbit. You can use it as a boneless fillet or in pieces with bones. Do it to your taste. In this case, the kebab is in pieces on the bone.

Cut the lard into small pieces and mix with the rabbit.
STEP 6

Season with onions, pour in wine and stir. Let the meat soak for 15 minutes.
STEP 7

Add the spices in oil to the meat and mix thoroughly. And marinate everything in the refrigerator for 1.5-2 hours!
STEP 8

Now that the meat has marinated, it’s time to light the wood!
STEP 9

While the coals are cooking, thread the kebab onto skewers. Between the rabbit is a piece of bacon. Only 4 skewers.
STEP 10

At the level where the shish kebab will be made, it is impossible to hold your hand for more than 2 seconds - the coals are ready, it’s time!
STEP 11

Place the kebab on the coals for 20 minutes of frying.
STEP 12

As soon as the fat began to drip onto the coals, it was time to start turning the kebab.
STEP 13

Time has passed, the dish is decorated - it's time to remove the kebab!
STEP 14
