Powdered milk dough for pies

Just as lush, soft and tender as always! Butter dough made with milk powder is convenient and practical. To my taste, it is absolutely not inferior to what is prepared with regular milk or water. I didn’t notice any difference in appearance, ease of use or taste of the finished products.

    How to knead dough with milk powder? First prepare all the ingredients. Butter and eggs should be at room temperature. Flour of the highest grade. Yeast - dry, fast-acting. Water - filtered, heated to 40⁰C.

    Pour warm water into a tall glass. The water should be pleasantly warm to the touch, not hot. Sift the milk powder into a glass to remove any lumps.

    Add sugar and yeast. Stir the dough and leave for 20-25 minutes in a warm place. I leave the dough in a closed microwave, in which I have just heated a glass of plain water.

    A good dough is a thick and fluffy foam cap on the surface of the milk. If the dough has not risen, then the baking will not work.

    Pour the dough into a deep bowl, add a pinch of salt for taste and beat in eggs at room temperature. If you plan to bake pies with a sweet filling, you can add 1 more tablespoon of sugar at this stage. If it's salty, don't add anything. Lightly whisk the mixture.

    And sift the flour. Start with ⅔ of the specified amount of flour and then add more if necessary.

    As you knead the dough, be aware of its consistency. As soon as the dough stops sticking too much to your hands, stop adding flour.

    Knead the dough for 10-15 minutes until it becomes elastic. Gather the dough into a ball and leave in a warm place for 1.5-2 hours.

    During this time the dough will rise well. It is kneaded with your hand and left to rise for another 20 minutes. in a warm place. After which the dough will be ready for forming pies, final proofing and baking.

Recently I made pies with milk powder. Since I still had a lot of dry milk left, I decided to try another version of the test using dry milk for pies. I used premium flour with a high protein content. It took me about 410 grams. The dough turns out tender, soft, pliable, elastic. In 1.5 hours, the dough increased by about 1.5 times. I decided to make one large pie with frozen lingonberries. I baked the cake at 180 degrees for about 40 minutes. The pie turned out lush, tender, very tasty. In the already baked dough you can feel the light pleasant sweetness of powdered milk. I really liked this moment. Thank you very much for the recipe!
