STEP 1

How to bake potatoes in pumpkin in the oven? Prepare the ingredients. For such a dish, it is better to use unsweetened varieties of pumpkin, round and not very large, it will bake faster in the oven. It is better to take potatoes that do not boil quickly so that they do not turn into mashed potatoes when baked.
STEP 2

Wash the pumpkin, cut off the cap from the top, remove the pulp with seeds with a spoon or knife. It is also better to remove the pulp from the walls and add it to the potatoes for filling. You can dry the seeds and use them as an addition to soups or salads.
STEP 3

Cut the pumpkin pulp into cubes. The pumpkin pieces should be larger than the potato pieces because the pumpkin takes less time to bake and cook.
STEP 4

Peel the onions and cut into cubes. Don't skip the onions - they will make the dish more aromatic and tasty.
STEP 5

Wash the potatoes, peel them and cut them into cubes or pieces of any shape, smaller in size than pumpkin pieces.
STEP 6

Combine the vegetables, mix and fill the pumpkin with them. You can safely fill it to the very top - during baking the vegetables will settle significantly. Add salt and ground black pepper to taste. If desired, you can use any other seasonings and spices.
STEP 7

Pour in the olive oil, stir the vegetables in the pumpkin again and add enough water to cover two-thirds of the pumpkin's contents. You should not add more water, otherwise a lot of liquid will remain in the pumpkin after baking. If you keep the pumpkin in the oven longer, until the water has completely evaporated, the vegetables may turn into puree.
STEP 8

Place the pumpkin on a baking sheet, pour a little water into the bottom, place it in the oven, preheated to 180 degrees, for 40 minutes or longer. The exact time will depend on the features of your oven and the size of the pumpkin. If desired, at the end of baking, the vegetables in the pumpkin can be sprinkled with grated hard cheese and kept in the oven until the cheese melts. Remove the pumpkin from the oven and serve, cutting into portions and spreading out the filling. Bon appetit!
